Prosciutto Balls (get your head out of the gutter)

Sometimes when you invent things or new ways of doing things, don't you think to yourself.  Holy shit why didn't I do that earlier.  Prosciutto, mozzarella and pesto then deep fried.  Your are a food genius.  Try them, try them now.  My poor wife probably thinks I am nuts, but hey who isn't right?

Here is an amazing blend of flavors.

Ingredients

4 Slices of Prosciutto (from your local butcher)
8 Mini Mozzarella Balls
2 Eggs
1 Cup Panko
1 Cup Flour
1 TSP Dried Basil
1 TSP Dried Oregano
1/4 TSP Salt
1/2 Cup Pesto (make it from scratch its better and cheaper)
1/4 Cup Heavy Cream


Making The Balls

  • First mix your egg mixture
  • Put oregano, salt and basil in Panko and mix well
  • Now slice your Prosciutto in half
  • Now add the mozzarella ball to the Prosciutto
  • The trick I learned is tuck the prosciutto around the ball 
  • Now lets do this a few times and set them aside
  • Grab a medium sauce pan add oil to it and turn on medium high
  • Grab a small sauce pan and add your pesto and heavy cream, turn it on low and mix well
  • Now place Prosciutto balls in flour then egg wash then Panko
  • Dip it back into the egg wash and then Panko again
  • Hold the Prosciutto around the ball well



  • Set them aside as you finish them all




  • Your oil should be ready
  • Place them one at a time as this will not allow the oil to cool down to quickly



  • I have only placed 4 in at a time
  • Flip them over about 2 minutes after you have dropped them in the oil
  • After another 2 minutes take them out and place them on a plate
  • Grab a small saucer and place your pesto in it
  • Serve them right away

Now I owned an Italian restaurant in Portland and I do not know why I did not make these.  But, that's ok I made them now and my guests will love these when we have them over for dinner.
