Italian Salami Rollatini (My Style)

Yes we eat a lot of Italian food.  My wife is Italian and I owned an Italian restaurant.  A lot of these recipes are from my little noggin and I am a very creative chef.  I like to see what's in the fridge and how I can make it into a meal of such amazing pleasure.  Remember that lasagna we made last week, well I saved the noodles knowing I was going to use them for something.  To my surprise I have made this great dish, easy, simple and fast.

Ingredients

Leftover Lasagna Noodles
1 Cup Mozzarella Cheese
1/3 Cup Parmesan Cheese
1/2 Cup Ricotta Cheese
1 Package Frozen Spinach
3 Green Onions (Diced up)
Roasted Garlic
10 Artichoke Hearts (Diced up)
1/2 Cup Diced Hard Salami
6 Fresh Basil Leaves
1 Tsp Dry Oregano
Marinara Sauce

Mixing all your Ingredients

  • This is the fun part
  • Turn your oven on to 400 degrees
  • Grab a large bowl
  • Grab a deep dish pan
  • Dice up your artichoke hearts, onions, salami and garlic.  Place all these ingredients in bowl
  • Add your cheese and fresh basil.
  • Make sure you get all the water out of the frozen spinach (this will affect the dish if you don't)

  • Mix well 
  • Lay out your noodles so you can start stuffing them
  • Stuff your noodles with enough mixture to cover them
  • Pack down the stuff so that when you roll it, it wont come out of the sides
  • Roll them
  • Grab your deep pan and add a little marinara sauce to the bottom (this keeps it from sticking)
  • Finish rolling them and add them all to your dish
  • Add your cheese
  • Place in the oven, bake for 40 minutes or until the cheese is golden brown
  • Take out of the oven and allow it to rest for a few minutes
  • Plate and serve with a salad our like we did we ate peas with ours
