Cranberry Roasted Chicken (Gluten Free and Low Calorie)

I have asked a few of you to give me suggestions on what you would like to see me cook.  A few of them I am working on and some of them I will have to do when I have guests.  But don't worry I will make what you ask of me.  Last night I was feeling light and easy.  Remember that cranberry pomegranate recipe I made, well I roasted bone in chicken with it served it with red quina, and sauteed some green beans with onions, garlic and almond slivers.

It turned out really good.  Here is the recipe, its great when you really don't have that much time to cook.  Enjoy everyone.

Ingredients

1 Bone In Chicken (pieces separated)
1 1/2 Cup Cranberry Sauce (Made from scratch)
1 TBL Balsamic Vinegar
2 Clementines
1 Tbl Butter
Salt and Pepper to taste
Olive Oil
Fresh Green Beans
1/2 Caramelized Onion
1/4 Cup Slivered Almonds
2 Cups Quina
4 Cups Water


Starting The Chicken

  • First wash your chicken off
  • Turn your oven on to 375 degrees
  • Grab a baking pan
  • Take your chicken and start to add salt, pepper, olive oil and balsamic vinegar



  • Now squeeze your clementines on the chicken and add your cranberry sauce





  • Place this in the oven for a good 45 minutes or cooked to 165 degrees
  • While this cooks lets start the green beans
  • Take the tips off and add to a steamer
  • Allow this to steam for 5 minutes
  • When done, grab a saute pan and turn it on medium heat
  • Add your olive oil about (2 TBL)
  • Now add your already cooked caramelized onions and garlic
  • Add your green beans and then the almonds
  • Add as much salt and pepper you would like
  • Allow this to saute for 10 minutes, turn heat done to low

  • Start your Quina
  • Rinse it off first
  • Add it to your stove and cook on medium high for 15 minutes
  • When Quina is done add your 1 TBL butter and salt and pepper
  • Take the chicken out of the oven and start to plate it
This is a very light dish and its good when you have other things to do around the house.  You can serve it with what ever you want.  Have a wonderful day and enjoy.
