Amber's Pasta (Gluten Free)

I have no pictures for this recipe, but I will assure you that it is very tasty and it is my sister's favorite dish I have probably made her so far.  This past weekend I visited her with my Mom, we had a great time just relaxing and catching up.  I hope you all enjoy this as I am sure I will have to make this again and when I do I will take as many pictures as I can.  Enjoy

Ingredients

2 LBS Of US Shrimp
1 Package of Gluten Free Pasta (Preferably the Quina type)
5 Cloves of Garlic (Minced)
1 Whole Shallot (Minced)
1/2 Cup Cherry Tomatoes (Sliced in half)
6 Fresh Basil Leaves (Minced)
Olive Oil
Salt and Pepper
1 Tsp Red Pepper Flakes
1/4 Cup Chopped Coppa Salami
1 Cup Heavy Cream
1/2 Cup Gorgonzola Cheese
1/4 Cup Shredded White Cheddar and Herb Cheese

Making The Dish

  • First we turn on a pot of water to high for the pasta
  • If need be start rinsing off your shrimp
  • Peel and de-vain them 
  • Cut the tails off and dice the shrimp in half
  • Grab a large saute pan 
  • Set the shrimp aside
  • Mince up your garlic, shallot and basil
  • Turn saute pan on to medium high heat
  • Add your olive oil to pan and allow this to heat up
  • Slice and dice up your coppa salami
  • Slice your tomatoes in half
  • Add the onions and garlic to pan allow this to cook for 4 minutes
  • Add your shrimp and allow this to cook for 5 minutes
  • Now we add the salami
  • Add your cream and turn heat down to medium low heat
  • Add your fresh basil, cheese, salt and pepper
  • Allow this to slowly thicken for about 5 minutes, now turn heat down to low and allow it to slowly simmer
  • Drain your pasta and add it to your sauce
  • Serve immediately
  • Add the red pepper flakes at the end
This was a great dish if you are in the mood for shrimp.  It seems a little complicated to put together, but the over all flavors made this dish unforgettable.  Make this for the holidays or for when you have guests over.  Have a wonderful time and let me know what I can help with.
