Holy Shit That Was Good Pork Tenderloin

Look I am sorry if I offend you with my words, but my parents can vouch for this meal I just made for them. I am not in my kitchen or do i have the space I normally do when I cook.  My knives are not here and I do not know how my Mother cooked for 5 people in her small ass kitchen.

Tonight I made the best pork tenderloin you could ever eat.  As you know Felicia does not eat pork, she is not with me.  I love you honey, but sometimes I need pork.

Here is the best ever.  Enjoy.

Ingredients

4 LB Pork Tenderloin (from local butcher)
3 Apples
4 Cloves of Garlic
11/2 Onion (diced)
1 LB Bacon
1 Stick of Butter
1/2 Tsp Ginger
1/4 Cup Brown Sugar
1 TBL Apple Cider Vinegar
1/2 Lemon (Some lemon zest from it)
Salt and Pepper
Granulated Garlic
1 Cup Beef Stock
1 Cup Chicken Stock
1 LB Green Beans
3 Large Baker Potatoes
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Milk



Making The Chutney

  • First we dice up 1/2 of an onion 
  • Grab a medium sauce pan and turn it on medium
  • Place 2 Tbl butter in the pan and allow it to melt
  • Add your onions and let them caramelize
  • Dice your apples up 
  • Now add your apples to the onions and add your brown sugar, vinegar, ginger and lemon zest
  • Allow this to basically cook itself on low heat for 40 minutes



Getting the Pork Ready
  • Preheat your oven to 415 degrees
  • Grab your tenderloin and score it like this
  • I had to cut mine in half because my parents did not have a big enough pan
  • Add your salt and pepper and granulated garlic. I add enough tot make a crust
  • Grab a large pan and turn the heat to medium high
  • When pan is hot add pork tenderloin to pan fat side down
  • When fat side is down allow this to cook for 8 minutes and add salt and pepper and granulated garlic to the other side
  • Turn over, add your beef stock and place in the oven for 40 minutes
  • While this cooks 
  • Dice up your potatoes and start to boil them so you can mash them
Making The Green Beans
  • Dice up your bacon
  • Turn on burner to medium high
  • Dice up your onions
  • Add bacon to pan and allow this to cook for 15 minutes

  • Add your onions and his cook for another 10 minutes
  • Add green beans and chicken stock and let this cook for 15 minutes
  • Add salt and pepper to taste when getting close to being done

  • Check your chutney and add 4 tbl butter
  • Whip your potatoes
  • Add your cheddar, milk, garlic, salt, pepper and rest of your butter to potatoes
  • Take your pork tenderloin out of oven and let this rest for 5 minutes
  • Now its time to plate
  • Put potatoes down first
  • Pork on top, use the drippings from the pan to pour over the pork
  • Add your chutney and your green beans
  • And you have yourself a master piece.
