My Green Bean Cassarole

It's that time of year for very unhealthy food filled with butter, fat and more calories.  I introduce to you my version of green bean Casserole, I'm warning you now that I am not responsible for the amount of calories that your body will intake from this dish

Ingredients

2 LBS Fresh Green Beans
2 Whole Shallots (1, sliced, 1, diced)
5 Cloves Garlic (sliced)
1 1/2 Cup Heavy Cream
2 TBL Bacon Fat (Felicia does not know this is in it)(but now she does)
1 Cup shredded White Cheddar
Salt and Pepper to taste
1 Cup Canola oil (for frying onions)
1/2 Cup Flour
1/2 Cup buttermilk

  • The wine is for you to drink while cooking
  • First thing we do is take the tips off of the green beans
  • Rinse them
  • Now we blanch them for 4 minutes
  • As the green beans are blanching, lets slice and dice the onions
  • Grab a medium saute pan and turn it on medium
  • Place your bacon fat in pan and allow it to heat up
  • No add your diced shallots and sliced garlic to the heated up bacon fat
  • Allow this to cook for 5 minutes
  • Add your heavy cream and turn down heat to low
  • Add your cheese
  • As this cooks, take your green beans off the heat and drain them
  • Now add the green beans to the cream mixture





  • Now allow this to cook on low for 10 minutes
  • Get your oil started for your fried onions
  • Turn that heat on to medium high
  • Now lets get your dry and wet ingredients ready
  • 1/2 Cup of flour with added salt and pepper
  • 1/2 Cup buttermilk 
  • Now dip your onions into the wet and then the dry and add it to the hot oil

  • Do a little at a time for they will stick together and not cook all the way through
  • When they start to cook put them on a paper towel 
  • Now grab a deep dish pan and put your green bean mixture in first
  • Now add your fried onions
  • Place in oven for 15 minutes
  • When your dish is done this is how wonderful it looks, just imagine how it tastes
If you want you can add bacon to the top for an extra crisp.  I have done that before as well.  Enjoy everyone.
