Also I have included the rice and lentil recipe to go with this dish. Enjoy everyone.
Ingredients For Marinated Chicken
4 Chicken Breasts
1 Cup Yogurt
1/2 Cup Hummus
2 Tsp Curry
3 Cloves Garlic (Sliced)
1 Tsp Diced fresh Ginger
- Now all you do is rinse off your chicken
- Grab a Ziploc bag, place chicken in bag
- Add your yogurt, hummus and curry
- Mix well in the bag and refrigerate for 6 hours or longer
Ingredients For Lentil and Rice
1 Cup of Brown Rice
1 Cup of Yellow Lentils
4 Cups of Chicken Stock
1/2 White Onion (Diced)
3 TBL Butter
1 TBL Cumin
1 Tsp Tumeric
Salt and pepper to taste
6 Garlic Cloves (minced)
1 Cup Peas
Making the Rice and Lentils
- First thing we do is preheat the oven to 385 degrees and get that ready for the chicken
- Now grab a medium sauce pan and add your lentils
- Add 2 cups of chicken broth
- And simmer for 20 minutes
- Now we dice the onions and garlic up for the rice/lentil mixture
- Grab a large saute pan and turn on medium
- Add your butter
- Ads your onions to the melted butter and caramelize for 20 minutes
- Add your spices to the caramelized onions
- As this cooks lets get the chicken out of the Ziploc bag and start to put it in the pan.
- Dice up your ginger and garlic and place on the top of the marinated chicken
- Mix together and place in the oven for 30 minutes
- As this bakes
- Get your lentils, drain them
- Add your rice to the onion, garlic spice mixture and allow this to cook together for 3 minutes
- Add your lentils and mix together and add salt and pepper
- Allow it to cook together for 4 minutes
- Add your chicken stock and allow it to cook down
- If rice is not all the way done add water (1 cup)
- As it cooks down
- Add your peas to the rice/lentil mixture and adjust seasoning
- Allow this to cook on low for about 5 minutes
- Add more salt and pepper to your desire
- Take the chicken out of the oven
- Now it is time to plate this great dish
- Pour some of the sauce over the chicken so that the rice absorbs some of that flavor
- Great weekend dish
