Portabello Burger With Love

Yesterday was Felicia's birthday and I had asked her what she wanted.  Her exact words were Portabello burger with roasted Delicata squash and peas.  So I said alright I can do that.  I used to make this dish at Dorothy's Cafe and it was really popular.  I decided to put it on one of the pretzel buns I made and added a few extra treats to this tasty burger.  Now I don't eat mushrooms so, I made myself meatballs.  That post will come next.

Enjoy this easy to put together recipe.  Have fun and enjoy.

Ingredients

2 Portabello Mushrooms (steam removed)
1/4 Cup Olive Oil
1/4 Cup Balsamic Vinegar
1 Onion
1/2 Cup Blue Cheese
2 Buns

Marinating The Mushroom

  • First thing we do is remove the stim
  • Put your mushrooms in a bowl and toss the olive oil and balsamic vinegar on them
  • Make sure you cover all of the mushrooms with the mixture
  • Place in fridge for a good 2 hours
  • While that is in the fridge
  • Slice your onions and caramelize them for a good 15 minutes
Cooking The Mushroom
  • Take the mushrooms out of the fridge 
  • Turn your oven on to 375 degrees
  • Place the portabellos in a large saute pan
  • Add the cheese first and then the onions


  • Place in the oven for 20 minutes 
  • While this cooks
  • Grab your pretzel bun and slice it in half and place in the oven for 2 minutes to get it toasty
  • Take out of the oven and place it on a plate
  • Slice some Avocado and place it on the bun
  • Grab some lettuce, mayo and whatever you would like on your burgers
  • Take the mushrooms out of the oven Place one on the prepared buns 
  • With the extra juice from the mushroom pour it oven the mushroom
  • Put the top on and chow down
