Turkey Carbonara

Left overs are here and there are a million ways to use them.  Here is a fast, simple, easy, great tasting recipe I want to share with you.  Carbonara is an Italian dish that uses very simple ingredients.  Onions, garlic, peas, heavy cream, egg, pancetta and Parmasen cheese. A great combination of flavors.  Enjoy

Ingredients

Left over Turkey
11/2 Cups Heavy Cream
1/2 Yellow Onion (diced up)
4 Garlic Cloves (minced up)
1 Cup Frozen Peas
1/2 Cup Pancetta (diced up)
1 Cup Shreddad Parmessan Cheese
Salt and Pepper To Taste
1 Egg
2 TBL Butter
Any Type Of Pasta

Making The Sauce

  • First start your water for your pasta 
  • Grab a large sauté pan and add 2 TBL butter, allow it to melt
  • Dice up your onions and garlic and add it to your melted butter
  • Let the onions and garlic caramilze on medium heat for 5 minutes
  • Add your pancetta and peas, let this cook for another 3 minutes
  • Add your heavy cream and turkey and let it heat up for 3 minutes
  • Add your salt and pepper, stir well
  • Add your cheese and stir until cheese is melted
  • Allow this to thicken up
  • As your pasta is cooking, turn your carbonara down to low
  • Add your egg to the sauce and mix this well until completely incorporated
  • Drain your pasta and add it to your sauce
  • Mix these well together and serve immediately

Eggnog Heaven AMAZING!!!!!!!!

For the love of everything made in amazing food gods.  This is by far the best thing I have ever, ever made.  Please make this and love it as much as we have.  If you have any questions, ask and I will help you.  Egg nog goddesses has arrived.

Ingredients

4 Cups Milk
5 whole Cloves
1 TSP Cinnamon
12 Egg Yolks
11/2 Cups Sugar
4 Cups Heavy Cream
1/2 TSP Nutmeg
2 TSP Vanilla
Mixing Everything
  • First thing we do is get a medium sauce pan 
  • Put your milk, cloves and cinnamon in pan and turn on low
  • Do not let it boil, cook milk mixture for 5 minutes 
  • In a mixing bowl place your egg yolks and sugar together and mix until its thick, this will take 2 minutes


  • Take your milk mixture and slowly add it to your egg yolk and sugar mixture



  • Allow this to mix for about 2 minutes



  • Pour mixture back into the sauce pan and heat it on low for 5 minutes or until it thickens up
  • Once it has thickened up 
  • Strain into a pitcher to take out the cloves
  • Place in the fridge for an hour 


  • After it has cooled add your heavy cream, bourbon, nutmeg 
  • Place back in the fridge and drink it the next day
  • This is the best thing I have ever, ever made

Whiskey Pecan Pie (yes, I said whiskey)

Believe it or not this is a great pie.  My Grandmother's recipe to be exact.  I find it fitting to have this recipe for the holidays and there are here.  This is simple easy and good with a glass of eggnog which is what I am working on after I post this.  Enjoy

Ingredients

1 Homemade Pie Crust
1 Cup Molasses
1 Cup Sugar
4 Large Eggs
3 TBL Bourbon
2 Tbl Melted Butter
1 Tsp Vanilla
Pinch of Kosher Salt
2 Cups Half Pecans

Mixing It All Together

  • Turn oven to 350 degrees
  • Get your pie crust and start to roll it out on a floured surface
  • Grab a pie pan and put butter all over it
  • Take your pie dough and place it in the buttered pan and start to edge the sides


  • Take a fork and put some holes in the bottom (this allows it to cook evenly)
  • Grab all your ingredients and place it in a mixing bowl and turn mixer on medium speed and beat until smooth about 5 minutes
  • Add egg one at a time

  • Place pecans in the bottom of the pie shell 
  • Pour your ingredients on top of the pecans
  • And it should evenly look like this
  • Place this pie in the oven for 50 minutes and it should look like this when it comes out
  • Let it cool and eat it up with some homemade whip cream

Pumpkin Cheesecake (Oh Yeah Baby)

Normally Felicia and I make this massive 6 tier dessert for Thanksgiving.  But this year she is a little occupied with papers and I am bored as ever.  We decided not to do this dessert this year and instead I have made pumpkin cheesecake.  I mean you cant go wrong with cheese, more cheese and pumpkin with sugar.  It is the holiday season and I am trying so hard not to eat the hell out of everything I make.  I have to keep this beautiful figure.  Ha

Anyways here is the recipe, simple and really good.

Ingredients

Crust Recipe:

  • 1 1/2 Cup Graham Crackers (Crushed up)
  • 1 TBL Sugar
  • 5 TBL Butter
Filling Recipe:
  • 2/3 Cup Brown Sugar
  • 1/2 Tsp Cinnamon
  • 1/4 Tsp Ground Ginger
  • 1/8 Tsp Nutmeg
  • 1/8 Tsp Ground Cloves
  • 1/8 Tsp Salt
  • 2 8oz. Cream Cheese (room temperature)
  • 3 Large Eggs
  • 1 Tsp Vanilla
  • 1 Can Pumpkin Puree
Cream Cheese Topping:
  • 1 Cup Sour Cream (room temperature)
  • 1 Tsp Vanilla
  • 1/4 Cup Sugar
Making The Crust
  • First turn your oven on to 350 degrees
  • Grab a spring form pan and spread butter all over it, as much as you want

  • Take a plastic bag and place graham crackers in it and beat the hell out of it (good way to get your frustrations out)

  • Now grab a small bowl and add your crumbs
  • Add your sugar and butter to the mixture and mix well

  • Place the crumb mixture to your well buttered spring pan and spread evenly

  • Place this in the oven for 10 minutes
  • Grab another bowl and mix your sugar together with your cinnamon, nutmeg, ginger, cloves and salt

  • Set that aside
  • Grab your mixing bowl and add your cream cheese and beat this until smooth (2 minutes)

  • Start adding your sugar mixture and scrape sides to incorporate all the ingredients
  • Add one egg at a time (yes I can crack an egg with one hand), mix this well
  • Add your vanilla and pumpkin, mix this for another 3 minutes and scrape the sides
  • Get your crust out of the oven 
  • Add your filling to the crust


  • Place this in the oven for 30 minutes
  • Place a baking pan with water on the bottom shelve to allow moisture in the oven for the cheesecake
  • While this bakes lets make the topping
  • Grab a small bowl and add your sour cream

  • Add your sugar and vanilla
  • Mix well and set aside

  • When cheesecake is done place on top and bake for another 8 minutes

  • Now your finished product
  • Allow this to cool
  • Place in the fridge for and serve it the next day or on Thanksgiving

Buttermilk Buttery Biscuits (Yes I know I'm amazing)

When I'm in the kitchen, I'm like a mad scientist.  I will experiment with anything, anything at all until I get it right.  This morning for breakfast I got these beauties right.  So flaky, so buttery and so freaking good.  I am a food god.  Kidding.  Anyways Enjoy this one.

Ingredients

2 1/4 Cup All Purpose Flour
2 TSP Sugar
1 TBL Baking Powder
3/4 TSP Baking Soda
3/4 TSP Salt
9 TBL Butter
3/4 Cup Buttermilk

Making Biscuit Love
  • Preheat your oven to 425 degrees
  • Grab a Large Bowl 
  • Add your flour, sugar, baking soda, baking powder and mix well with a fork
  • Slice up your butter and add it to your flour mixture
  • Mix it with your hands or a pastry cutter




  • After you have mixed it with your hands it should resemble crumbles

  • Add your buttermilk and mix well
  • Place dough on floured surface, use your hand to flatten as thin or thick as you want them



  • Cut the biscuits how ever big you want them
  • I just used an old water glass
  • Grab a baking pan 
  • Place your biscuits in pan 


  • Add a little butter on top and bake them for 20 minutes or until golden brown
  • When there done serve them right away or freeze for 2 weeks




  • There is nothing better then homemade biscuits, especially with gravy and some scrambled eggs.  Have a great holiday week.  Enjoy.
