Potato Soup With Bacon (Why Yes)

I have not been to the grocery store in about two weeks and we really didn't have much in our fridge so I decided to make potato soup with bacon.  It's a good recipe to have when its really cold outside and or if you don't have much in your fridge.  Well here is the recipe.  Enjoy

Ingredients

8 Potatoes (washed and trimmed)
6 Cloves Garlic
1 Yellow Onion
1 Cup Heavy Cream
3 Cups Chicken Stock
1/2 LB Apple Wood Smoked Bacon
Salt and Pepper To Taste
1 Tbl Granulated Garlic
2 Stalks Celery
3 Carrots
1/2 Cup White Cheddar Cheese

Putting The Soup Together

  • Grab a large stock pot and turn it on to medium high heat
  • Dice up your bacon 

  •  Add it to your stock pot and cook until golden brown

  • While this cooks lets dice up your vegetables

  • Peel your potatoes and dice them up 

  • When the bacon is done, put it in a bowl 


  • Add your vegetables to the bacon fat
  • Cook them together for 5 minutes 
  • Add your potatoes and let them cook together for 3 minutes
  • Add your seasonings to the potato and vegetable mix
  • Once this has cooked together add you chicken stock and heavy cream
  • Let this cook together for about 35 minutes
  • Once the potatoes are soft grab a hand blender or put them in a blender
  • Once you have blended the potato mixture together add salt and pepper to taste 
  • Now its time to serve the soup
I added chives, bacon bits and cheese to the top.  Enjoy this wonderful soup.
