Chicken Pot Pie

Everybody has a recipe for chicken pot pie, but you know you don't have mine.  Here is a simple, full of flavor and vegetable pot pie.  I love making this when the weather is cold.  You know Felicia never complains about what I make, I just make her be the taster.  Thank you for being there for the food honey.

Anyways, here is the recipe.  Enjoy.

Ingredients

Chicken Breast (How every many you want, it's just Felicia and I, so I only use 2)
2 Celery Sticks
2 Carrots
1 Whole Yellow Onion
6 Cloves Garlic
1 Cup Frozen peas
1 Cup Fresh Green Beans (Diced Up)
3 TbL Butter
2 TBL Granulated Garlic
Salt and Pepper To Taste
11/2 Cup Heavy Cream
1 Stick Fresh Rosemary (Removed from stem)
1 Tsp Dried Sage
1 Cup Sharp White Cheddar Cheese

Making The Filling

  • Alright grab your large saute pan and lets get to chopping
  • Dice up your onions, celery, carrots
  • Turn your pan onto medium high heat and add 3 tbl butter and allow this to melt and heat up
  • Start dicing up your garlic
  • Add your vegetables to the melted butter and add your garlic in about 4 minutes after the vegetables have had time to cook
  • Damn cat is still in the kitchen
  • Anyways, add your garlic and allow these to cook together for 5 minutes
  • While that cooks it is time to dice up your chicken and add it to your vegetables
  • I use a different cutting board, just because I don't want to get sick from using it on my wood cutting board

  • Add chicken to vegetables
  • Allow this to cook together for 6 minutes, turn heat down to medium low
  • Add your peas, green beans, spices and salt and pepper
  • After this has had time to cook add your heavy cream
  • Let this incorporate for about 4 minutes
  • Add your cheese and let this get thick, it should cook for 4 more minutes
  • Adjust flavors and turn heat off
  • Grab your pie crust and add your chicken greatness to the wonderful pie crust

  •  I want you all to know how hard this is to take pictures and fill something up at the same time

  • Grab your other pie crust and lay it on top of the pie
  • Trim the sides and pinch them together, put two slits in the middle and place this bad boy in your oven
  • Bake it for 30-35 minutes or until golden brown on top
  • Take it out of the oven and grab some plates and dig in 
  • Be careful, this thing is very hot
