Baked Vegetarian Pasta

We love pasta and owning an Italian restaurant has taught me one thing.  You can not go a week or a few days without pasta.  This was a very popular dish that was on my menu and for awhile, I refused to make this dish at home because of how many times I made it at DaVincis.  I made it so much, I would dream about it eating me.  Anyways, its really, really good and packed with flavor, lots of it.

Ingredients

Any Type Of Pasta
1 TBL Capers
8 Kalamata Olives Diced up
1/2 Cup Artichoke Hearts (diced up)
11/2 Cups Spinach
1 Onion
Olive Oil
6 Cloves Garlic (minced up)
1 TSP Oregano
1 TSP Dried Basil
1 Can Tomato Sauce
5 Whole Mushrooms (sliced)
1/2 Cup White Cheddar Cheese
1/3 Cup Parmesan Cheese
1/4 Cup Blue Cheese
1/4 Cup Mascarpone Cheese

Making The Dish

  • Make your pasta if need be
  • Preheat your oven to 400 degrees
  • Grab a large saute pans 
  • Dice up your onions, garlic, artichoke hearts and olives
  • Slice your mushrooms
  • Turn your pan on to medium high heat
  • Add olive oil and allow it to heat up
  • Add your onions and garlic first and let this cook for 5 minutes
  • Add your capers and olives and let this cook for 2 minutes
  • Add your mushrooms and allow these to cook for 3 minutes
  • Add your spinach and artichoke hearts and let this cook for another 2 minutes
  • Add your pasta, salt, oregano and basil mix them together well
  • Now add your sauce and mix well and allow this to cook on medium low heat for 5 minutes


  • After it has cooked together for a few minutes add it to your baking dish and start to add your cheeses




  • Place this in the oven for at least 25 minutes or until it is golden brown on top
  • The smells will make your day bright
  • Allow this to cool for a few minutes 
  • Place it in the middle of the table and allow your family, friends take control
