Potato Cakes with Sauerkraut

Mashed potatoes are the best, there are so many ways to use them.  Potato cakes is one of my favorite things to make with left over mashed potatoes, just add a few things and your good to go.  Here is a simple fast recipe to use for any occasion.  Enjoy.

Ingredients

Left Over Mashed Potatoes
3 Green Onions (small dice)
1 Egg
1 TBL Dijon Mustard
1/4 Cup Flour
2 TSP Dry Dill
5 TBL Butter
Salt and Pepper To Taste

Making The Cakes With Sauerkraut
  • First grab a small sauce pan and add your sauerkraut to it 
  • Open up some good beer and cook this on low for 20 minutes
  • Now grab a medium bowl
  • Add your leftover mash potatoes
  • Add flour, eggs, dill, salt and pepper, green onions and Dijon
  • Turn on your cast iron skillet pan to medium high and add 2 tbl butter
  • Mix this well and start forming them into patties

  • Drudge it in the flour and add it to your heated cast iron

  • As these cook let them get crispy brown on both sides (cook on each side for 4 minutes)
  • Turn heat down to low and let them cook for another 5 minutes
  • Grab a plate and plate your wonderful left overs together
I added a dollop of sour cream on top.  Enjoy everyone.  I am always looking to use whatever is in my fridge.  Have a great day.
