My Egg Salad Sandwich (You'll be amazed)

Don't dis me because I create masters.  This sandwich is amazing.  Just take your left over cornbread slice it and stuff it with egg salad, cucumber and cherry tomatoes.  This sandwich is good for when you just want something light and not to heavy.  I hope you enjoy this,  actually I know you will.

Ingredients

6 Hard Boiled Eggs
1/2 Cup Mayo
1/4 Cup Sour Cream
1/4 Cup Shredded Cheddar Cheese
4 Green Onions
Salt and Pepper to taste
1 TBL Dried Dill
1 TBL Dijon Mustard
Cherry Tomatoes
English Cucumber
Corn Bread

Making The Sandwich

  • First thing we do is boil the eggs for 15 minutes and then run them under cold water
  • Grab a medium bowl and start dicing your green onions and add that to the bowl
  • Add your cheese, mayo, sour cream, dill, salt and pepper to bowl
  • Start dicing your eggs up to add to bowl
  • Add eggs to bowl and start slicing your cucumber and tomatoes
  • Mix your egg mixture well and adjust the seasonings to your liking
  • Take your cornbread and heat it up in the microwave for 45 seconds, slice it in half
  • Layer that baby with your egg salad, cucumber and cherry tomatoes
I served ours with carrots, its a pretty damn good sandwich and it goes great with the cornbread recipe I have on my blog.  I hope you can make this soon.  Have a wonderful day.
