Stuffed Spinach Artichoke Mushrooms (Gluten Free)

I call this my spinach artichoke dip stuffed mushrooms.  I am not a mushroom fan, but my wife is and I like to make her things I will not eat.  She loves when I make these beauties.  These are great to have when you have a big party, family or just for the Super Bowl.

Ingredients

8 Mushrooms (Preferably Mini Portabello)
1 8oz. Cream Cheese Package
3 Cloves Garlic (Minced)
8 Fresh Basil Leaves (Minced)
1/2 Cup Grated White Cheddar Cheese
Salt and Pepper
1 Cup Fresh Spinach
1 Jar Artichoke Hearts (Quartered and you Mince them up yourselves)
1 Whole Shallot (Minced)
2 TBL Balsamic Vinegar
2 TBL Olive Oil


Making The Stuffing

  • Turn your oven on to 375 degrees
  • First remove the caps from the mushrooms and set aside
  • Place the cream cheese and cheddar cheese in a mixing bowl and mix well until fluffy
  • Start dicing up your basil, garlic, shallots and artichoke hearts





  • Add all of these ingredients to your cheese mixture and blend them together well
  • Dice up the stems you removed from the caps and add them to your mixture as well

  • While this is mixing add your mushrooms to a baking pan and add Olive Oil and balsamic vinegar to the mushrooms and allow the mushrooms to soak in the flavors
  • Add salt and pepper to your mixture 
  • Take the mixing bowl off the mixer and set next to your mushrooms
  • Start adding a tablespoon of mixture to each cap
  • It's OK if it's overflowing, that means they will be extra good


  • Once all stuffed add them to the oven and bake for 25-30 minutes
  • Once baked sure immediately and have a blast eating them

These go great with your parties you may be having for New Years, Christmas, Fourth of July or the Super Bowl.  Have fun making these wonderful bunches of goodness.

Marinated Flank Steak (Gluten Free)

I have been out of the picture for about a week, due to family coming in and the holidays.  This dish is a dish I made for a Christmas party Felicia and I had.  I marinated the steak for 24 hours and grilled it for a very short time and that was it.  This steak melted in your mouth after you place it in there.

Have fun with this recipe, you can make this anytime of the year and for any occasion.

Ingredients

3 TBL Honey
5 Cloves of Garlic (minced)
2 TBL Fresh Ginger (Minced)
1/2 Cup Soy Sauce
1/4 Cup Sesame Oil
Pinch of Salt and Pepper
1 TSP Red Pepper Flakes

Marinating The Steak

  • First take your flank steak that you got from your butcher and wipe it with a paper towel to get off the access water
  • Lay it in a big baking pan

  • Dice up your garlic and ginger



  • Add your salt and pepper with your pepper flakes
  • Add your honey and soy sauce with the sesame oil


  • Add your garlic and ginger to the meat and rub it around


  • Marinate it in the fridge, covered for 24 hours
  • On the next day, grab a grill pan and allow it to heat up to medium high heat
  • Add your steak to the pan and cook it on each side for 1 minute
  • Place it on a cutting board and allow it to sit for 2 minutes, this allows it to rest and the meat will still be cooking.
  • Slice it thin and eat it with whatever you like
Again I served this for a party, sliced it thin and made a Gorgonzola sauce to go over the top.  This dish will go great on salads, rice, potatoes or just sauteed vegetables.  Enjoy and have fun with this one.

Cranberry Genoa Cheese-ball Say What?

Yes, cranberry Genoa salami cheese-ball is sweet and salty all in the same bite.  Don't dis that I play with my food and I make amazing things come out of it.  I can't help how awesome I am sometimes.  Kidding, this is a great recipe for your parties and holiday events, its, simple, fast to put together and just plan good.  Have fun and Enjoy.

Ingredients

1/2 Cup Diced Genoa Salami
3 Green Onions (diced)
1/2 Tsp Worcestershire Sauce
1 Tsp Salt
1 Tsp Black Pepper
5 Dashes of Hot Sauce
1 TBL Lemon
1/4 Cup Dried Cranberries (diced up)
2 Packages of Cream Cheese
1/2 Cup shredded Cheddar Cheese
1 Stick of Butter (unsalted and room temperature)
  • Grab a mixing bowl and add your butter and cream cheese
  • Mix well until it becomes smooth, this will take about 5 minutes
  • Dice up your onions and Genoa salami


  • Add your Worcestershire sauce and hot sauce and mix well

  • Add your cheese
  • Add your onions and Genoa salami and mix until well blended
  • Add your salt and pepper with the lemon
  • Dice up your cranberries and place them on a plate
  • Once the cheese is well blended 
  • Start to form it into a ball and then roll it in the cranberries
  • Once added to the cranberries it will look like this
  • Refrigerate before your guests arrive and serve it with any crackers you desire
  • Have fun with this recipe and play around with it all you want




Cajun Honey Roasted Almonds (Gluten Free)

Parties are coming and it's time to make things that people can munch on so that don't get so drunk at your parties.  I am not saying that happens a lot.  But you never know.  So I made Cajun honey roasted almonds to tie over for the night of parties. This is a great recipe that will actually go on any nut.  Even you.  Have fun making this easy simple recipe.

Ingredients

2 1/2 Cups Whole Almonds (Non salted or roasted)
1/4 Cup Sugar
1 Tsp Salt
1 Tsp Cajun Seasoning
1 TBL Olive Oil
1 TBL Honey
1 TBL Water

Making The Snack

  • First turn your oven on to 350 degrees
  • Grab a cookie sheet and add your almonds to the sheet, spread them out evenly

  • Place them in the oven for 10 minutes or until you smell them cooking and turn a darker brown
  • While this is in the oven grab a large saute pan and add your water, olive oil and honey and heat it up to meduim
  • When almonds are done add them to the oil mixture and mix well until coated completely 
  • Turn heat off


  • Add almonds to your sugar mixture and mix them well until coated with mixture
  • You can serve these right away or store in an air tight container and serve the next day or snack on them at the office

Chocolate Chip Cookies (Not your Momma's Recipe)

The sweets are hitting the town and this girl is making all kinds of cookies for the holidays.  My family always made an abundance of cookies during the holiday season and this year I have gone absolutely crazy making them.  Here is a very simple, good recipe for chocolate chip cookies. My Mom always insiteted we make these babies.  Enjoy everyone.

Ingredients

1 cup (2 sticks)unsalted Butter at room temperature
3/4 cup granulated white sugar
3/4 cup firmly packed light brown sugar
2 large Eggs
1 1/2 teaspoons pure vanilla extract
2 1/4 cups all-purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon salt
1 1/2 cups semisweet

Making Great Cookies
  • First turn on your oven to 375 degrees
  • Grab a mixing bowl
  • Add your butter and sugar

  • Mix these together well until fluffy
  • Scrape the sides so that you incorporate all the flavors together
  • Add your vanilla 
  • Add your eggs one at a time and allow this to mix well together for about 2 minutes

  • Once this has mixed well
  • Add your dry ingredients slowly
  • Once you have added your flour mixture add your chocolate chips and mix on low speed for 1 minute

  • Take the mixing bowl and place it on the counter
  • Put your dough in the fridge for an hour to allow it to form
  • Grab to cookie sheets and start adding your dough to them in Tablespoon forms
  • Bake these beauties in the oven for 10-12
  • When they are brown around the edges and soft in the middle they are done
  • When you take them out place them on a cooling racks
