Melt in your Mouth Crepe's

When I owned DaVinci's, I would make manicotti from scratch and to make that, in the traditional Italian way, you make a crepe style shell.  It brings back some great memories.  So when I make this dish the house smells like a bake shop.  I do enjoy making these thin pancake like shells and stuffing them with whatever fruit is in season at that time.  This morning I put in some Rainier Organic apples (I am a little biased when it comes to apples, they need to be from Oregon or Washington).  Oh and when I cook, most of the time I listen to Michael Jackson, Jazz or 80's music on Pandora.  Enjoy everyone.  Thank you for reading my blog.

Ingredients For Apple Filling

4 Apples (Peel them)
4 TBL Butter
3 TBL Brown Sugar
2 TBL Heavy Cream
1/2 Package Cream Cheese

Making the filling

  • Peel and slice your apples like this

  • Grab a saute pan, put the heat on medium
  • Place your wonderful butter in like this

  • Allow it to melt
  • Add your apples to the melted butter like this

  • Allow them to cook for 3 minutes as your stir them or flip them like I do
  • Add your brown sugar like this

  • Allow the brown sugar to caramelize all over those beautifully cooked apples 
  • Add your heavy cream and your cream cheese, like this


  • Now turn the heat to low and cover with a lid
Ingredients for the Crepes

1 Cup All Purpose Flour
1 Cup Milk
3 Eggs
3 TBL Butter (Melted)
1 TSP Sugar
1/4 TSP Salt


Making the Crepes
  • Place flour in the bowl 
  • Add your salt and sugar
  • Add your milk and melted butter, mix well 
  • Add your eggs one at a time and mix well


  • Grab a cast iron skillet or if you have one a crepe pan like this one

  • Turn heat on to medium low
  • Add your butter and allow it to melt
  • Place the batter in with a ladle and make sure it covers the pan like this

  • Allow it to cook on each side for two minutes and flip it over

  • When cooked completely put it on a plate and continue with the next one
  • You should get a total of 6-8 crepes 
  • Stuff them and fold um any way you want
  • I top ours with whip cream (I have a huge sugar high after these)
