Leftover Cabbage Rolls

I am big on saving money and using everything that is left over.  Last night I came up with my own version of cabbage rolls, not just any cabbage rolls, but gluten free vegetarian ones.  You can add meat if you'd like.  This was an experiment that went right.

I made a tomato sauce and used all my left overs.  Don't be scared its really good.  Enjoy

Ingredients For Tomato Sauce

1 Can Tomato Sauce
2 Carrots
1 Celery
1/2 onion
4 Garlic Cloves
8 Fresh Basil Leaves
Salt to taste
1 Cup Red Wine
1/2 Cup Water

Making the Tomato Sauce

  • First cut up all your vegetables like this

  • Grab a medium sauce pan and turn it on medium 
  • Once it heats up place some olive oil in the pan
  • Add your cut up ingredients and allow them to carmalize
  • Once they have carmalized add your spices and salt
  • Allow them to cook for 2 minutes, stirring often
  • Add your wine

  •  Allow the wine to cook down, this takes about 5-7 minutes
  • Then add your tomato sauce like this
  • After you have added the tomato sauce add a 1/2 cup of water
  • lower the heat to low and cover
  • Allow it to simmer for 40 minutes
  • Now we need to cut up some vegetables and get the cabbage soft to roll
Ingredients for Cabbage Roll

1 Head of Cabbage
Any vegetables you want
Left over rice
Left over Mashed Potatoes
4 Leaves of Fresh Basil
6 Cloves of Garlic (Smashed)
2 Carrots (Diced)
1 Celery (Diced)
Peas (As much as you want)
1/2 Onion
Salt
2 TSP Dried Oregano
2 TSP Granulated Garlic
Black Pepper
2 TSP Fresh Majoram
2 TSP Fresh Tarragon



Starting the Filling
  • Get a large stock put and put your cabbage in it and fill it covering the cabbage
  • Place on burner and turn it on medium high and cover 
  • Allow it to boil for 15-20 minutes 
  • Turn your oven on to 375 degrees
  • While this is boiling start cutting up your vegeables and getting your left overs ready
  • Grab a large saute pan, turn it on medium
  •  Add olive oil and allow it to heat up
  • When heated up add your vegatables like this
  • Cook them for 5 minutes, stirring often
  • Add your spices and salt
  • Stir them together
  • Add your rice and mashed potatoes like this
  •  Stir them together like this
  •  Add a ladle of your tomato sauce and allow this to cook for 5 minutes
  • Now take the cabbage of the burner and strain all the water out
  • Let it cool
  • Set aside 
  • Take your vegetable mixture off the burner and allow it to cool as well like this
  • Once cooled
  • Take leaves off of cabbage and place on a cutting board like this
  • Start stuffing them like this
  • Fold like you would a buritto, like this
  • Place them in a baking pan like this
  • Add your tomato sauce like this
  • Place in oven for 20 minutes
  • And your finished product looks like this
  • I just served these alone.
  • Like I said you can add meat, we just try to eat meat once or twice a week.
  • Its a great way to utilize your leftovers, as I try to save as much money as I can while I cook.
