Beef Something

I have had this 5 pound chuck roast in my freezer for two weeks, trying to decide what to do with a big ass chunk of beef to cook for just Felicia and I.  I'm sure the dogs would love to help, but I wanted to make something simple and easy.  While on my bike ride yesterday, I thought to myself "I know what to do".  So when I got home, after taking a shower and getting in comfy clothes.  I grab some simple ingredients and made a great stew like beef and served it over rice.

It was really good and we have a few left overs.  I hope you enjoy.  Have a great day

Ingredients

5lb Beef Chuck
5 Cloves Garlic (smashed)
2 Sprigs of Fresh Rosemary
2 TBL Oregano
2 Cups Dry Red Wine (the rest is for you)
2 Cups Water
1/4 Cup Worcestershire Sauce (hope I spelled that right)
Salt and pepper to taste
Olive oil for pan

Braising and cooking the Chuck

  • First turn your oven on too 325
  • Grab a stock pan or a big saute pan that a lid will fit on
  • Pat your beef with a paper fowl, this gets rid of any extra moisture (blood)
  • Salt and pepper you beef like this

  • Turn your skillet on medium high heat, add your olive oil
  • And then add your beef

  • Let it cook on each side for 5 minutes
  • This allows it to get a crust from the salt and pepper
  • Once flipped over add your wine, garlic and rosemary with water and Worcestershire sauce

  • Put a lid on it and put it in the oven for 3 hours.

  • When you take it out of the oven place it on a burner that is on medium.
  • Take the meat out of the sauce and place it on a plate.
  • Grab a 1/4 cup of flour and thickening the sauce to make a gravy
  • Now its time to plate it and eat it

  • This was really tender and a great fall dinner, that you could prepare before you go and do chores, ride your bike, read a book or just drink a few glasses of wine.  i hope you all enjoy this wonderful dish.  Have a great fantastic day.  Chow
