Hmm Bacon, Apples and Cheese with rosemary Fries

Now I know what your thinking, didn't you just make a sandwich similar to this?  Yes but this has bacon and a pesto mayo sauce on it with tomatoes.  This is the ultimate best sandwich in the world.  I made mine with bacon and Felicia's with none.  It's not that she doesn't like bacon, its that she thinks they are to cute to eat.  I respect that a lot.  But I LOVE BACON.

Enjoy this amazing melt in your hand and mouth sandwich with the tastiest rosemary fries.

Ingredients

1 Lb Apple wood Smoked Bacon
Smoked Gouda
Mozzarella
Blue Cheese
Cheddar
Pesto mixed with mayo (As much as you want)
Tomato
Bread (Imake my own, but do what you want)
Potatoes
Rosemary
Olive Oil
Butter

Making The Fries

  • First turn your oven on to 415 Degrees
  • Grab some beautiful potatoes and rinse them off
  • Grab rosemary
  • Grab a cookie sheet
  • Cut your potatoes and put olive oil all over them
  • Add your rosemary (just take it off the stem and spread all over your potatoes)
  • Add as much salt as you like
  • Put those wonderful babies in the oven and let them cook for 30 minutes
  • Now we cook the BACON

  • Do not throw the grease away from the bacon, they are so many things to do with that beautiful fat.  Stay tuned to other recipes that will be created with that wonderful flavor
  • As you cook the bacon this is what your dog and cat might look like
  • Benji and Maggie are so waiting for something to drop (Not happening in this house)
  • Now we build the sandwich of your dreams
  • Cut some slices of bread or if already sliced Awesome.
  • Now put butter on one side and place that side face down on another cookie sheet
  • Put your pesto mayo on the other side and start adding your cheeses
  • Add your apples and bacon
  • Get the fries out of the oven 
  • Place your sandwiches in the oven
  • Now allow them to cook for about 10 minutes
  • Take them out and cut in half

  • Plate that magical invention and eat it like there is no tomorrow






Bacon is amazing with anything, today I will be making bacon jam.  Yes that is right I said bacon jam.  Enjoy everyone.

Carmel Apple Bars (Gluten Free)

Apples are in season, enjoy this easy gluten free dessert topped with my homemade Caramel sauce.  Tis the season for APPLES.

Ingredients

2 1/2 Cups Almond Flour
3 TSP Baking Powder
3/4  Cup Granulated Sugar
2 TSP Cinnamon
1 TSP Nutmeg
1/2 TSP Kosher Salt
4 TBL Canola Oil
2 TBL Orange Juice
1TSP Vanilla Extract

6-8 Apples
6 TBL Granulated Sugar
2 TSP Cinnamon


Mixing dry Ingredients

  • First grab a large bowl
  • Add all your first ingredients and mix well


  • Add your wet ingredients and mix with a spoon

  • Turn your oven on to 350
  • Grab a cutting board and another large bowl
  • Wash your apples
  • Start to cut them with skin still on
  • Put all apple slices in large bowl


  • Add your sugar and cinnamon
  • Mix well 
  • Now take your dry/wet ingredients (Leave 1 1/2 cups aside) and layer the bottom of your pan
  • Start adding your apples to the first layer (leave some apples for the second layer)
  • Add the second layer of dry/wet ingredients and gentle press down
  • Add the rest of your apples

  • Bake in the oven for 45 minutes
  • While this is baking it's time to make the caramel sauce
Caramel Sauce Ingredients

4 TBL Butter
1/2 TSP Salt
1/2 Cup Milk
1 Cup Brown Sugar (Packed Well)
1 TSP Vanilla


Mixing The Ingredients
  • Grab a small sauce pan 
  • Add all your ingredients

  • Turn on burner to medium 
  • Stir constantly (So that it doesn't burn)
  • Allow it to cook on low heat for 5 minutes
  • Turn Heat off and set aside
  • Take your apple bars out of the oven 
  • Allow them to cool
  • Add your caramel sauce (hell as much as you want)
  • Your beautiful finished product looks like this

If you have left over caramel sauce use it in your coffee or anything else you want.  It keeps well in the fridge for a month.  Enjoy everyone.  Have a wonderful day
























Momma Mia LASAGNA!!!!!!!!!!

Italian food is so good.  Every time I make any Italian dish it reminds me of the sweet memories of my grandparent in-laws.  My grandfather in-laws parents where from Italy and when they moved to the states they opened an Italian restaurant in Klamath Falls, Oregon.  During the probation years they still sold alcohol in the basement.  Just hearing my grandfather in-law talk about these times, is a great memory I'll never forget.

Turn on the Italian music.

So every time I cook, it's for them and for all the great times I had with them.  Thank you Molatore family. Everyone enjoy this recipe, it's a great one and its better the next day.  Chow

Ingredients

Marinara Sauce (I make my own, but I will not release that recipe, sorry)
Pesto
Organic Green Blend
mushrooms
Parmesan Cheese
Ricotta Cheese
Mozzarella Cheese
Lasagna Noodles
Red Onion
Garlic
Balsamic Vinegar
Olive Oil
Fresh basil
Almonds
Tomatoes
Salt



First Caramelize the Tomatoes
  • Turn oven on to 425 degrees
  • Grab a cookie sheet
  • Slice tomatoes and place them on the cookie sheet
  • Drizzle with olive oil, balsamic vinegar and salt

  • Bake in the oven for 30 minutes
Making Pesto
  • Grab a blender
  • Place Nuts, basil, Parmesan cheese, garlic and salt in blender

  • Start to Blend while adding olive oil (add as much oil as you want)
  • Turn off blender and set aside
  • Now turn your water on for your noodles (turn it on high)
Caramelizing the onions and making the sauce
  • Grab a large saute pan, turn the heat on medium
  • Grab your onion and slice it thin
  • Add butter to your pan, allow it to melt and add your onions
  • Add a little salt to the onions to release the sugars in the onions, this allows it to cook faster
  • Now turn on a small saute pan for your mushrooms
  • Slice your mushrooms
  • Add olive oil to your small saute pan 
  • Add mushrooms and stir them until they are coated with the oil
  • Cook these for 3 minutes and turn heat off
  • Now that the onions are caramelized, add a dash of red wine to DE-caramelize the pan
  • Add your garlic slices and cook for another 3 minutes

  • After that has had time to cook now add your greens (mostly the whole box)

  • Allow this to saute on medium heat for 5 minutes
  • While this is cooking it is time to add your noodles to the water 
  • Mix well and turn down heat
  • While this is cooking now take your lasagna out of the oven and turn the oven down to 385 degrees
  • Set them aside and allow them to cool
  • Now we add the sauces to the saute greens and onion mixture

  • Mix well and turn heat down to low and allow it to cook for 5 minutes, stirring occasionally
  • Now drain your noodles and cool them down with cold water
  • Set them aside with your mushrooms and tomatoes
  • Sauce should be done
  • Start to shred your cheeses

  • Set all your ingredients up like this
  • Now its time to make the master piece one layer at a time
  • Lay down noodles first
  • Tomatoes
  • Sauce and mushrooms (now I can't stand mushrooms, so I put them on half)
  • Now add your four cheeses
  • Gentle pat down with your hand 
  • Repeat this process
  • And it should look like this before you put it in the oven for 35 minutes
  • See how tricky I am with the mushrooms
  • Now make a salad 

  • Set your table 
  • When lasagna is done take out of oven and allow it to settle for 15 minutes
  • This helps it from making a mess everywhere
  • Chow done and it your lasagna

You can add meat to this dish if you like, we try to eat less meat.  But I like it with sausage and tons of cheese.  Have a good time making this and don't get intimidated by this dish.  It's always better the next day anyways.  Chow
