Lemon Bars

When I came back from my trip to Nashville I decided to make a light dessert and also something that reminded me of summer.  Considering all of this snow that we have had, we needed it.  Anyways who doesn't love lemon bars right.

Ingredients

1 Cup of All Purpose Flour
1 Stick of Butter ( room temp)
1/2 Cup Powdered Sugar
1 TSP Vanilla
1 TSP salt
2 Eggs
1 Egg Yolk
1/4 Cup Lemon Juice
1 TBL Lemon Zest
1 cup of Sugar
1 TSP Powdered Sugar  



Putting It Together

First we turn our oven on to 350 degrees
Now we grab a mixing bowl and place our butter in it


Now we take our flour and add I to the butter and mix together with a spatula



When mixing it together make sure it starts to resemble pea like shapes


Now add your vanilla and salt mix these well together
Add your 1/2 Cup powdered sugar


Mix them well and grab an 8x8 pan and add oil to pan


Add your dough and start to press it down



Bake in oven for 25 minutes
Now lets make the lemon part
Take your eggs and place them in your mixing bowl


Add your sugar and mix well


While this is mixing lets juice our lemons



Now add that to your egg mixture and mix well
Take one of the lemons and shred it to get a TBL and add to your mixture


Take dough out of oven and add your lemon mixture




Bake in one for 22 minutes
When finished add your powdered sugar and enjoy




These are so good and are easy to make.  Have fun with these.

Enchilada Sauce (you'll never buy canned again)

There is nothing better then homemade enchilada sauce.  I have played around with this recipe for awhile and finally came up with an outstanding recipe I'm sure you'll grow to love and will never want to buy store bought again.  It only takes a few minutes to make.

Ingredients

2 TBL Olive Oil
1 TBL All Purpose Flour
1/4 Cup Chili Powder
1 TBL Cumin
1 TSP Oregano
1 TSP Salt
1/2 Cup Tomato Paste
2 Cups Chicken Stock



Making The Sauce
  • First grab a sauce pan and turn on medium
  • Add your oil
  • Add your flour and mix well


Once you have added your flour start adding your spices
Mix these well together



Add your tomato paste and chicken stock and allow it to cook together for 10 minutes
Once it has cooked together add your salt to taste and serve it right away or refrigerate for a month

Have a great time making this recipe, it goes great with anything you want.

French Toast. (yum, yum, yum)

My mom makes the best French toast and when growing up we loved the days she made us french toast and bacon.  And god I loved it when the bacon hit the syrup with a little sugar on it.  The best memories ever right there.  So working in the restaurant industry I have seen my fair share of some not so good french toast to what the hell is that your making.  Mom this is your recipe just a little jazzed up.

Ingredients

Bread of course
4 Eggs
1 TSP Nutmeg
1 TBL Cinnamon 
1/2 Cup Brown Sugar
1 TSP Vanilla
1/2 Cup Buttermilk
4 TBL Butter





Putting It Together

Crack your eggs in the large bowl



Add your cinnamon, nutmeg, brown sugar and buttermilk and mix well together





Slice your bread and get your large pan and turn it on to medium on the stove top
Once warmed up and your butter





Now the fun part begins
Take your bread and place in the batter and soak the bread





Place at least 4 pieces in at a time
I turn my oven on to 195 to keep the plate and toast warm while the others bake
Cook on each side for 4 minutes. And turn over





Now that your done
It's time to plate
Stack them high and cover in powdered sugar and butter

Fish and Chips (So bleeping good)

I have always loved fish and chips, and when I lived on the Oregon Coast I worked at this little joint called West Coast Chowders. They had the best fish and chips and used the fish right off the boat.  I will not use any other recipe but there's when I make mine.  So here you go and enjoy.

Chip Ingredients

Yukon gold potatoes
3 TBL butter
Salt 
Cajun Seasoning





Fish Ingredients

1 LB Fresh Cod
1 1/2 Cup All Purpose Flour
1 TBL Granulated Garlic
1 TBL Granulated Onion
1 TSP Salt
1 TSP Pepper
1 12 Oz. Can or Bottle of Beer
Cast Iron Skillet
1 1/2 Cup Canola Oil



Making The Potatoes

Turn oven on to 425 degrees
Grab a large baking pan 
Dice your potatoes up and place on baking sheet
Pour your butter all over the potatoes and use your hands to coat the potatoes



Now place your Cajun seasoning and salt all over them



Place in he oven for 25 minutes

Making The Fish

Take your cast iron and place it on your stove
Grab a medium bowl and add your flour and seasonings





Mix them well together
Make a well in the middle and add your beer





You might need to add a little more beer
Once mixed together set aside and cut up your fish





Just cut them in thick pieces



 Turn your cast iron on and add your oil turn it on to medium high
Once heated up add your fish to batter and coat both sides





 Place in oil slowly so you don't burn yourself



Now place them all in if there is room



Cook on each side for 4 minutes

Turn them over like this



While this is cooking take your chips out of the oven



When fish is done place on paper towel and let grease come out



Now grab your plate and start plating
