Avocado and White Cheddar Omelet (gluten free)

When I was at te grocery store the other day, really wanted some avocado.  What I was going to do with it, I wasn't sure.  But this morning when I woke up I decided to make an omelet with fried potatoes.

I love breakfast, its the most important meal of the day and there is so much you can do with it.  Here is my wonderful version of the omelet.

Ingredients

6 Organic Eggs
1/2 Cup White Cheddar Cheese (shredded)
2 TBL Butter
1 Whole Avocado
1 TBL 1/2 &1/2

Putting It Together

  • First grab a non-stick skillet or a cast iron skillet
  • Grab a medium bowl and crack your eggs in the bowl
  • Add your 1/2 & 1/2
  • Pinch of salt and mix them together well
  • Turn your pan on medium high heat and allow it to heat up
  • Add your butter to pan
  • When butter is melted add your egg mixture
  • Take a rubber spatula and lift the sides of the egg to allow the egg to run over the sides, this helps with an even cooking
  • Flip egg over and add some of your cheese, not all of it
  • Add Avocado 4 slices
  • Turn half  of the omelet over and place on plate
  • Add 4 more slices of avocado on top and more cheese
  • Serve immediately 
  • Repeat to make another omelet
