Fish and Chips (So bleeping good)

I have always loved fish and chips, and when I lived on the Oregon Coast I worked at this little joint called West Coast Chowders. They had the best fish and chips and used the fish right off the boat.  I will not use any other recipe but there's when I make mine.  So here you go and enjoy.

Chip Ingredients

Yukon gold potatoes
3 TBL butter
Salt 
Cajun Seasoning





Fish Ingredients

1 LB Fresh Cod
1 1/2 Cup All Purpose Flour
1 TBL Granulated Garlic
1 TBL Granulated Onion
1 TSP Salt
1 TSP Pepper
1 12 Oz. Can or Bottle of Beer
Cast Iron Skillet
1 1/2 Cup Canola Oil



Making The Potatoes

Turn oven on to 425 degrees
Grab a large baking pan 
Dice your potatoes up and place on baking sheet
Pour your butter all over the potatoes and use your hands to coat the potatoes



Now place your Cajun seasoning and salt all over them



Place in he oven for 25 minutes

Making The Fish

Take your cast iron and place it on your stove
Grab a medium bowl and add your flour and seasonings





Mix them well together
Make a well in the middle and add your beer





You might need to add a little more beer
Once mixed together set aside and cut up your fish





Just cut them in thick pieces



 Turn your cast iron on and add your oil turn it on to medium high
Once heated up add your fish to batter and coat both sides





 Place in oil slowly so you don't burn yourself



Now place them all in if there is room



Cook on each side for 4 minutes

Turn them over like this



While this is cooking take your chips out of the oven



When fish is done place on paper towel and let grease come out



Now grab your plate and start plating
