Enchilada Sauce (you'll never buy canned again)

There is nothing better then homemade enchilada sauce.  I have played around with this recipe for awhile and finally came up with an outstanding recipe I'm sure you'll grow to love and will never want to buy store bought again.  It only takes a few minutes to make.

Ingredients

2 TBL Olive Oil
1 TBL All Purpose Flour
1/4 Cup Chili Powder
1 TBL Cumin
1 TSP Oregano
1 TSP Salt
1/2 Cup Tomato Paste
2 Cups Chicken Stock



Making The Sauce
  • First grab a sauce pan and turn on medium
  • Add your oil
  • Add your flour and mix well


Once you have added your flour start adding your spices
Mix these well together



Add your tomato paste and chicken stock and allow it to cook together for 10 minutes
Once it has cooked together add your salt to taste and serve it right away or refrigerate for a month

Have a great time making this recipe, it goes great with anything you want.

Chicken Enchiladas Ohhhhhhh Yesssss

I know everyone is on a kick to loose weight, make healthy food.  But do you realize making things from scratch and not just buying crap from a freezer is healthier.  I mean imaging knowing all the ingredients in your food.  When you buy frozen or canned you may not know half of the ingredients or know how to pronounce them

Alright I'm done lecturing here are my chicken enchiladas.

Ingredients

Chicken Breasts (boneless and skinless)
1 Onion (diced small)
3 Cloves of Garlic (minced)
1 Cup Frozen Corn
1 Can Chipotle Peppers (only using the sauce)
1Tsp Cumin
Homemade Tortilla Shells
Homemade Enchilada Sauce (recipe on previous blog)
Salt and pepper to taste
1 Cup White Cheddar Cheese
1 Avocado 




Putting It All Together

First dice up you onions
Grab a large sauté pan and place olive oil in pan and heat up to medium
Dice your chicken up



Add your onions to pan and cook until golden brown (5 minutes)
Now add your garlic and chicken
Cook chicken for 3 minutes and start adding your corn and chipotle sauce






Turn heat down to low and add your cumin, salt and pepper and a ladle full of enchilada sauce
Allow it to cook together for 10 minutes
While that cooks get your tortilla shells heated up and lay them down on a flat surface
Turn oven on to 375 degrees
Take a baking dish and add enchilada sauce to the bottom ( this keeps it from sticking)



Add your chicken to the tortilla shells (add mixture to the middle)
Fold tight




Add them to your pan with the sauce



Cover With the remaining sauce 



Add your cheese



Cook this beautiful thing for 25 minutes and serve right away.

It's Taco Time (Gluten Free Baby)

When we have tacos, there's a party. It's got to be the best meal ever invented and honestly.....it is.  How can you go wrong with meat, cheese and a shell that's like a big chip.

Tonight we had tacos and not just any tacos, turkey tacos.  A build your own combo.  I'm giving you the recipes to my own taco seasoning, bean mixture and rice.  Hope you all enjoy.  Chow.

Ingredients for Taco Turkey

1lb Ground Turkey Breast (from local butcher)
1 Yellow Onion(diced small)
6 Cloves Garlic (minced)
Taco Seasoning (Recipe to Follow)

Ingredients for Black Beans

1 Can Black Beans (rinsed)
1 Yellow Onion (small diced)
1 Cup Frozen Corn
1 Green Pepper (small diced)
1 Tomato (small diced)
3 TBL Taco Seasoning (recipe follows)
Salt to taste

Ingredients for Rice

1 Cup Brown Rice (rinsed very well)
2 1/2 Cups Water
Salt to taste
2 TBL Butter

Ingredients For Taco Seasoning

3 TBL Cumin
1 TBL Granulated Garlic
1 TBL Granulated Onion
1 TBL Chili Powder
1 TBL Paprika
1TSP Salt
1TSP Black Pepper

  • Grab a small bowl and mix these all together
  • Now we start making the bean mixture
Bean mixture

  • First thing is open the can of beans and rinse them off
  • Start dicing up your onions
  • Dice your tomatoes
  • Dice your green pepper
  • Grab a medium saute pan and turn on medium 
  • Add olive oil, allow it to heat up
  • Add all your ingredients and stir well


  • Add your spice mixture and add salt
  • Allow this to cook for 15-20 minutes



Making The Rice
  • Grab a sauce pan and add your rice
  • Clean rice mixture at least twice
  • When cleaned, add your 21/2 cups water
  • Set on burner and turn it on medium high
  • Leave alone
  • Now start cooking the meat
Cooking The Meat
  • Grab a saute pan and turn it on medium
  • Put oil in pan 
  • Add diced onions and garlic, allow these to cook for 4 minutes
  • Add your meat

  • Chop up meat with your spoon or fork
  • After meat has cooked all the way through add your spices
  • Put taco shells in oven for 5 minutes
  • Set your table 
  • And get ready to eat with all the fixings you like with your tacos


Since it is only Felicia and I it looks small compared to what a family of 4 would eat.  Im sure when we have kids our table will be bigger and our portions a lot bigger.  I hope you all enjoy and have a wonderful day.
