Pear Freaking Amazing Pie (Felicia's Words)

As I get older, I grow patience I guess. I never baked in my early culinary years.  Now, I enjoy it, what's wrong with me, I'm not sure.  But I will continue to do it, if I become good at it and of course if I have time.  

Well Felicia my wonderful wife, has asked me to make a pear pie.  Since we went to Costco and bought a 8 lb bag for just us 2.  I had to do something with them fast.  So here you go my friends.

It's Amazing.

Ingredients

1/2 Cup Brown Organic Sugar
4  TBL Corn Starch
1/4 TSP Ground Ginger
1/4 TSP Nutmeg
3/4 TSP Cinnamon
2 TBL Fresh Lemon Juice
5 TBL Butter
2 TSP Vanilla
5 Cups Pears (total of 8 pears, sliced thin)
Homemade crust (recipe for mine is on my blog)


Now lets put this awesomeness together

Pre-heat oven to 425 degrees

Grab a large bowl

Slice your pears thin and put in large bowl

Add your first 4 ingredients and lemon juice


Mix it well together until all coated

Add your vanilla extract


Roll out your pie dough on a nice floured surface


Grab your rolling pin and roll the dough out thin

Add it to your nicely oil pie pan


Add your pear filling next

Top it with your other pie dough top



Now use your index finger and thumb and pinch dough together


When down



Grab a sharpe knife and slice 5 slits in the top

Make an egg wash for the top to brown it nice and evenly (I used 1 egg mixed well)


Bake in oven on 425 degrees for an hour

Put a drip pan under pie

Take out of oven and let it rest for a 1/2 an hour
