THE Best Beef And Egg Noodles......EVER

Staple food is amazing and really the best thing to get you in the mood for fall.  This Football Sunday, I made The very best beef and noodles you'll ever put in your mouth.  So I wanted to share with you this greatness.

It's easy and so so good.

Ingredients 

2.5 Pound Pot Roast (hormone and Organic)
2 Cups Carrots
1 Cup Celery
1 Large Onion
8 Cloves Garlic
8 Small Potatoes
2 Bay Leaves
2 TBL Butter
Olive Oil
Salt and Pepper
1TBL Tarragon 
1 Small Can Tomato Paste
1/2 Cup Flour
10 Cups Water
1/3 Cup Red Wine Vinegar
1/4 Cup Worchesthire Sauce



Putting it Together

Grab your meat and pat dry
Pack salt all around it



Grab a large stock pan, turn heat on medium high and add olive oil and butter
Letit melt completely 
Add your beef when oils are hot
Get a nice crust on both sides (takes 8 minutes)




While this is cooking cut up your vegetables
Turn oven to 350 degrees



Set aside
Take your meat out and place on a plate



Take your onions and add to the juices
Saute these for 7 min then add your garlic



Then add your garlic and celery cook for 4 minutes
Then add your tomato paste



Once this is mixed well add some more salt and pepper this should turn dark (2 minutes)



Add your flour and allow it to turn a tan (3 minutes)



Add water and let it thickin up



Add your meat
Let this cook for 4.5 hours in the oven



Once it's time take out of oven and place on stove on medium 
Add potatoes and carrots allow this to cook for 30-45 minutes
While that's cooking boil water and make your egg noodles

Basically take a fork while beef is in the pot and tear apart

Serve it right over your noodles and enjoy this Amazinness

Black Bean Enchiladas (All from scratch)

You don't need to eat meat every night or every meal.  We try to eat meat only 3 times a week.  There are many ways to get your protein, beans, rice and or veggies.

Here is a simple middle of the week dinner to make for your family.

Ingredients

1 Dried Chili 
1 TBL Cumin
1 TBL Granulated Garlic
Salt To Taste
1 Cup Onions
1 Head Roasted Garlic
Green Onions
1 Can Black Beans
1 Can Tomato Paste
1 Lime
1.5 Cups Extra Sharp White Cheddar


1. Grab a sauce pan and put your pepper with 1 cup of water. Boil until pepper is soft.
2.  While that's working let's start chopping up your onions


3. Grab a medium sauce pan turn on medium high, place olive oil in pan and allow it to heat up.  
4. Add your onion and carmalize for 5 minutes.
5. Add your roasted garlic whole


6. Turn off your pepper and dwarn all the water, grab pepper, cut in half and take seeds out.
7. Dice up in small dice and add it to your onion and garlic mixture.


8. While this sautes add your spices and allow to cook for 3 minutes


9. Add 1 cup of water and your tomato paste


10. Allow it to come to a simmer.
11. Grab your cheese and shred
12. Open your black beans and drawn liquid out and rinse off with cold water
13. Place beans in mixing bowl and add your spices and salt with 1/2 cup of cheese.


14. Place your tomato mixture in a blender or use a hand blender. Turn oven on to 425 degrees




15. Set aside tomato mixture
16. Grab a baking pan and place a ladle full of sauce on the bottom.


17. Grab a tortilla and add your black bean mixture


18. Stuff the tortilla 



19. Roll tortilla and place in pan 


20. Repeat
21. Place another ladle of sauce on top


22. Add the rest of your cheese and place in oven for 15 minutes
23. Take out of oven and serve with whatever sides you want

Saffron Risotto With Seared Chicken and Peas (it's that good)

Feeling a little spunky tonight I made saffron risotto chicken. Out of this world. Probably one of the best dinners I've made in awhile.  Organic ingredients, healthy and oh sooo good.

Here is this easy step by step recipe for you all.

Ingredients

2 Organic Chicken Breast
1 Red onion
1 Cup of Peas
3 Cloves of Garlic
2 TBL Butter
1 Cup Arborio Rice
2 Cups Chicken Stock
Olive Oil
Salt
2 Pinches of Saffron 
1 Cup of Sharp Cheeses


Putting it together

1.  Cut Onion in dice size 





2. When onions are diced up heat butter up in a shallow pan
3. Once butter is melted add onions


4. Stirring frequently and making sure the onions are carmarlizing
5. Start dicing chicken up into bite size and on a separate cutting board
6. Heat up a skillet and add olive oil to pan and allow the pan to heat up and add your chicken
7. Season with salt
8. Let chicken cook for about 8 minutes


9.  Dice up garlic and add it too your onions and allow that too cook for 3 minutes
10.  Add rice and salt to taste



11. Allow rice to brown and then add your saffron and chicken stock along with your peas





12. Allow this to cook for about 10 minutes, add water if needed
13. Add cheese


14. Add chicken




15. Stir well adjust seasonings and well serve


16.  It's Out Of This World.
