Blackberry Buttermilk Bundt Cake (Yummy)

It's been way to long my friends.  So this recipe and cake will blow your mind.  I used all organic and fresh ingredients for this wonderful cake and since it's getting to be that time of year for bbqs and late nights outside I decided to share this beauty with you that I created out of my little head.

It's wonderful with a glass of Pinot Gris and some homemade whip cream.

Ingredients

2 1/2 Cups All Purpose Flour
2 Teaspoons Baking Powder
1 Teaspon Sea Salt
1 Cup Unsalted Butter (Room Temperature)
1 Lemon Zest
3 Large Eggs (Prefeable Organic)
1/2 Teaspoon Vanilla Extract
3/4 Cup Buttermilk
2 Tablespoons All Purpose Flour
3 Cups Berries

The Wonderful Glaze

2 Cups Powdered Sugar
1 Juice Of Lemon
1 Tablespoon Unsalted Butter

Putting This Amazinness Together

Preheat oven to 350
Grease bundt pan and set aside

In a medium bowl shift together the flour, baking soda and salt and set aside

In a standing mixer add your butter and sugar and beat till fluffy

Add your Eggs one at a time as you slow the mixer to low

Add your flour 1/3 of a cup at a time

Scrape sides when needed

Add buttermilk scrape sides

Turn mixer off and incorporate your berries with the 2 Tablespoons of flour

Gentle add them to your batter as you fold them in

Place your batter in your greased up bundt pan and add it to your preheated oven for 55-60 minutes.

Once cooled flip upside down and take cake out of pan

Drizzle your frosting over the top and serve
