It's Apple Sauce Time (Gluten Free)

Apples are in season and its time to go apple crazy.  I've made apple butter, apple sauce, apple bread, etc, etc,etc.  So in this wonderful blog you are getting my apple sauce recipe.  Simple and really, really good.

It goes great on anything.  So true it. 

Enjoy.

8 LBS Apples (Preferably Oregon)
1/2 Cup Brown Sugar
1 TSP Cinnamon
1/2 Apple Cider
1 Lemon Squeezed


Making Apple Sauce

1). Peel apples and dice them into bite size cubes


2) Add cubed apples to a large stock pot


3) Add your apple cider


4) Add your lemon


5) Add your sugar


6) Add your cinnamon and turn your stove top on medium 


7) Allow this to cook slowly for 35 minutes stirring often
8) When all apples turn to mush, take off heat and add it too a blender or use a hand blender to mash them well
9) And you have apple sauce



Like I said, easy, simple and goes great on anything.  Enjoy and have fun.

Not Your Boxed Brownies With Cream Cheese Frosting

Now let me ask you this. Do you love brownies? Or do you loveeeeeeee brownies? Because what I have here is the best brownie you will ever eat and trust me that box stuff your eating is crap.

Now here's the recipe I'll stop talking so you can stop salivating.

Recipe

2 Sticks of Butter
8oz Dark or Milk Chocolate Bars
2 Cups Sugar
1TSP Vanilla Extract
1 1/4 Cup Flour
4 Eggs
2TBL Chocolate Powder


Putting Amazingness Together

1) Grab 3 bowls
2) Grab a sauce pan and add your butter and chocolate bar, turn heat on medium and mix these ingredients together very, well and often


3) now mix your flour and and coco powder together and set aside




4) Now take your chocolate/butter mixture off the stove top and let cool for ten minutes
5) In your second bowl add 1 cup sugar and eggs and mix until well blended
6) Set aside
7) Add 1 Cup of sugar and vanilla and mix well with your cooled chocolate/butter mixture


8) Add the chocolate/butter mixture and add it too your egg and sugar mixture


9) Add your flour and coco mixture and mix well
10) Grab your 9x9 pan add a little butter to grease the pan
11) Add your brownie mixture and bake in a pre-heated oven of 350 degrees


12) Bake for 35 minutes and let them cool
13) Now make my cream cheese frosting

Ingredients For Frosting

4oz. Cream Cheese
4oz Butter
1TSP Vanilla Extract
2 Cups Powdered Sugar

Basically just mix it all together and put it on top of the brownies and well lick the bowl too.

Strawberry Pie (How Can You Resist)

On July 4th this year my mother and I decided to make strawberry pie.  I did not take many pictures as I was not aware my mother wanted to bake.  Anyways here is a great recipe of an awesome double crusted strawberry pie.

Ingredients

Pie Crust (Of Course my recipe, its on my blog)
2 1/2 Cups Strawberries (quartered)
1/2 Cup Brown Sugar
2 TSP Vanilla Extract
3 TBL Corn Stratch
2 TBL Water
4 TBL Butter
1 Egg Yolk
1 TBL Milk
2 TBL Raw Sugar

Making The Sauce

Ok first clean strawberries and pat dry, 
In a large bowl and the strawberries after they have been quartedered
Add sugar, vanilla
In a small bowl and corn Stratch and water mix well until dissolved 
Add cornstarch to strawberries and mix well
Grab a 9 inch pie pan 

Set oven to 375 degrees

Spread your pie crust out
Add strawberries to crust and add your butter
Add other crust to the top and crimp sides
Cut four slices on top

Mix your egg yolk and milk together and brush on top of crust 
Add some raw sugar to the top


And bake for 40 minutes or until golden brown
Take out and set aside


Now you'll have the best pie at the picnic or family event.

Ambrosia Salad (My Momma's recipe)

Ambrosia salad is a combination of canned fruits with a ton of sugar.  I am not a big fan of this dessert, but my Mother would make this in the summer time for any event that was coming up in the family.  Our family enjoys it so since the holidays are here. Why not?


My mother asked me to make it for her, so I did.  Here is the recipe for you all to enjoy for your summer events.

Ingredients


1 Container of Whipped Cream
2 Cups Shreddad Coconut
1/2 Cup Chopped Pecans
1 Can Crushed Pineapple
1 Can Mandarian Oranges
1 Cup Frozen Blueberries
1 Jar Maraschnio Cherries
1/2 Cup Mini Marshmellows
1 Cup Sour Cream


Mixing It All Together

Grab a large bowl
Add all your ingredients


Mix well, cool for a few hours or over night and serve cold


It's great for a hot summer day, picnics, family gatherings and what nots.  Have fun and enjoy.

Turkey Burgers with Cucumber Coleslaw

It's been awhile, maybe to long.  I've had a rough month, but I'm back in the kitchen and ready to make your mouth water.  Here is a favorite recipe we do almost every summer.  I thought that these flavors together make a great summer classic.

Here is mine with a cucumber coleslaw that is fast and simply to make and is amazing on the turkey burger.

Ingredients

1 Pound Ground Turkey Breast (local butcher)
1 TSP Cumin
1 TSP Cajun Seasoning
1 TSP Chili Powder
1 TSP Granulated Garlic
1 TSP Salt
1 TSP Worchershire Sauce
1 TBL Fresh Cilantro



Putting It All Together

Grab a large mixing bowl
Add your turkey meat

Add all your spices and mix well


Grab some and form into a pattie set aside on a plate
Continue until meat is gone


Turn your grill on

Now Time To Make The Coleslaw

Ingredients

1/2 Cabbage (Shredded
8 Baby Carrots Diced Up
3 Green Onions Diced Up
1/2 Cucumber Diced Up
1 TBL Apple Vinegar
1 TBL Sugar
1/2 TSP Dijon Mustard
1 Cup Mayo
Salt and Pepper to taste



Grab a cutting board and bowl

Dice all your ingredients up


Add too bowl with all your wet ingredients and mix well
Place in fridge until burgers are ready



Grill your Turkey Burgers until all the way done

Assemble them and serve right away

Cranberry Apple Chicken Salad

A little something to get you ready for all this nice picnic weather we've been having.  Enjoy my friends and have a great day.
INGREDIENTS
  • 4 cups diced, cooked chicken (between 2-4 chicken breast, depending on size)
  • 1 large celery stalk, diced
  • 1-2 green onions, sliced
  • ¾ cup dried cranberries
  • ½ cup pine nuts, toasted
  • ½ cup mayonnaise
  • ¼ – ½ teaspoon dry mustard powder
  • Salt & pepper to taste
INSTRUCTIONS
  1. Add all of the ingredients to a large bowl, and stir with a fork to combine.
  2. You don’t have to use a fork, but it helps to break the chicken up and give the salad a more appetizing texture.
  3. If it seems a little dry, add one tablespoon of mayo at a time until you reach the right consistency. Taste and adjust seasonings if needed.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to blend.
  5. Serve as sandwiches on croissants or on top of a bed of greens for a lighter option.

My Amazing Baked Beans (Gluten Free)

Who doesn't love Spring and summer.  Here is my version of Baked Beans.  I didn't think they would turn out as well as they did.  But here is the recipe for you all to enjoy.



Ingredients
8 slices bacon, halved
1 medium onion, cut into small dice
1/2 medium green pepper, cut into small dice
1 LB Navy Beans Soaked over night
3/4 cup barbecue sauce (My Recipe)
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 teaspoons dry mustard or 2 tablespoons Dijon
Getting Started
  • Adjust oven rack to lower-middle position and heat oven to 325 degrees. 
  • Fry bacon in large, deep saute pan skillet until bacon has partially cooked and released about 1/4 cup drippings. 
  • Remove bacon from pan and drain on paper towels. 
  • Add onions and peppers to drippings in pan and saute until tender, about 5 minutes. 
  • Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients)
  • Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. 
  • Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours.
  •  Let stand to thicken slightly and serve.

Asian Coleslaw Recipe

Asian Coleslaw Recipe

    The dressing on this salad is peanut-based. If you have a food allergy to peanuts, you can substitute tahini for the peanut butter (or leave it out all together), and toasted sesame seeds for the peanuts.
INGREDIENTS
  • 1 Tbsp creamy peanut butter
  • 6 Tbsp vegetable oil
  • 1/2 teaspoon toasted (dark) sesame oil
  • 4 Tbsp seasoned rice vinegar (if seasoned rice vinegar is not available, add a teaspoon or two of sugar to regular rice vinegar)
  • 4 cups thinly sliced cabbage (Napa, green, purple, or a combination)
  • 1/2 cup grated carrots
  • 1/4 cup toasted, salted, shelled, peeled peanuts
Optional
  • Chopped fresh cilantro
  • Thinly sliced green onions or chives

METHOD

1 Prepare dressing. Place peanut butter in a medium bowl. Add the vegetable oil and the toasted sesame oil and whisk until nicely smooth. Whisk in the seasoned rice vinegar and do a taste test. Depending on how you like your dressing, how salty your peanut butter is, how seasoned your rice vinegar is, you may want to add a little more vinegar, a little more sugar, or a little salt. (Makes about 3/4 cup of dressing.)
2 Toast the peanuts. Although the roasted peanuts from the store may already be cooked, you'll get even better flavor with just a little toasting. Heat a small skillet on medium high heat and add the nuts to the pan. Do not ignore or the nuts can easily burn. Stir a little with a wooden spoon until the peanuts begin to get browned in spots and you can smell the toasting aromas. Remove peanuts from pan to a dish.
3 In a large bowl, toss the sliced cabbage, grated carrots, and peanuts together, and any other optional ingredients you care to add (like a little chopped cilantro or green onions). Right before serving, mix in the dressing.
Great with fish or burgers.

Tomato Basil Soup

 This tomato soup recipe is a simple easy recipe to make.  Especially when it's cold outside, raining or just in the mood to dip a cheesy, cheese sandwich in your soup.  I've made this several times and its by far our favorite soup I make.  Hope you like this and have fun.

Ingredients

12 Roma Tomatoes
1 Shallot (diced)
5 Cloves of Garlic
1/2 Cup Heavy Cream
2 Cups Chicken Stock
7 Fresh Basil Leaves
Salt and Pepper to taste
1 TSP Granulated Garlic
1 TSP Granulated Onion
1 TBL Dried Basil
4 TBL Butter


Putting Your Soup Together

First grab a large stock pot
Turn your heat onto medium heat
Add butter and allow it to melt
Add onions and garlic


While that carmalizes cut tomatoes in half and take out the seeds



Now start adding your tomatoes to your onion and garlic



Allow this to bring out the juices in the tomato and allow them o break down 
Takes about 20 minutes
Now add your spices an salt and pepper
Add your chicken stock


Add your heavy cream


Add your fresh basil and allow this to cook for 15 more minutes


Now grab a hand blender and blend all of it together



After its blended together turn heat to low
Make your grill cheeses and eat them together


Now homemade tomato soup is not the sme color or thickness as canned...it's better

Oatmeal Cookie Orange Flavored Cheesecake

I like a challenge and this weekend I made myself.  So I made an oatmeal cookie orange cheesecake.  Ohh this is good and does taste just like an oatmeal cookie on crack.  Here is the recipe for you all to enjoy  on this gloomy Ohio weather day.

Ingredients

3 8 Ounces Cream Cheese
3 Large Eggs
2 Cups Rolled Oats
1/2 Cup Chopped Pecans
2 TBL Brown Sugar
1/2 TSP Cinnamon
1/2 Cup Butter
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar
2 TBL Flour
1 TSP Vanilla
1/2 Cup TSP Shredded Orange Peel
1/4 Cup Milk



First Thing We Do

Allow cream cheese and eggs to stand at room tempature for 30 minutes
Pre-heat oven to 350 degrees

Making the crust
In a food processor add you oatmeal and nuts and chop them together well
Add the brown sugar and cinnamon and process off and on for 10 seconds
Place this in a bowl and add your butter






Now add your oatmeal mixture to your spring form pan that has been buttered well


Flatten down with your hand



Set this aside and lets start making your cheese mixture

In a large mixing bowl add your cream cheese and granulated sugar, 1/2 cup brown sugar, flour and vanilla, orange peel


Mix this all together until smooth as butter



Add your eggs one at a time



Now that its mixed well 
Grab your crust and add your filling


Smooth out the best you can


Place on a cookie sheet with water covering only 1/4 of the pan


Place in oven and back for an hour

This is your finished product
Place in the oven for 4 hours or overnight and serve it cold
This way it gives it time to settle
